The Kitchen Knife - Medium #62 is the perfect size and weight for preparing recipes start to finish, from chopping and mincing garlic to slicing tough root vegetables.
Each skillfully hand-forged knife blade is made of wear-resistant carbon steel repurposed from railroad tracks and heated to a high temperature. The steel is then hammered a thousand times to achieve a thin, sharp edge that keeps sharper longer than inferior knives.
The chestnut or oak wood handle, slowly dried for years, is lightweight, strong, and rot-resistant. Marked by the craftsman's X, a trademark banding technique, “dang ghi,” around the knife’s handle holds the wood firmly in place and prevents splitting.
Fifth-generation craftsman Master Shin In-Young owns the oldest blacksmith shop in South Korea, established in 1845. Gyeonggi Province named him Intangible Cultural Heritage Treasure #60 in recognition of his rare skills and use of old-world techniques and traditional minimalistic design. Each individually handcrafted blade is stamped with Master Shen's signature mark #60 referring to his heritage status. A Master Shin knife is a durable, functional work of art.
Care Instructions: No need to sharpen before 2-3 years of regular use. Sharpen by hand using a honing stone. Avoid use on hard surfaces. Wipe clean with a soft cloth or use water only. Clean and dry thoroughly to prevent rust. To store, dry and lightly oil surface.
